This is a recipe that I’ve adapted for the slow cooker from one I found ages ago and with a fair bit of tweaking I think it works :)

Ingredients

250g Okra cut into 1 inch pieces
400g Mushrooms chopped into quarters
100g baby plum tomatoes chopped in half
2 tins chopped tomatoes
3 cloves crushed garlic
1inch chopped ginger root
1 small red chilli finely chopped and seeds removed
1 tsp coriander seeds
1 tsp cumin seeds
Pinch tumeric
2 crushed cardamom pods
Fresh coriander to garnish

1. Lightly fry the garlic, ginger and chilli in a little oil before adding the spices and cook for another 30 seconds or so.
2. Add in the rest of the ingredients (except the fresh coriander) and bring to the boil.
3. Pour everything into slow cooker and cook on low heat setting for 2-3 hours.
4. Stir in some fresh chopped coriander leaves about 10 minutes before serving.

Serve with rice and naan bread :)
