Meal Planning Monday
Gosh it seems really wintry at the moment so it’s a week of comfort foods here in the Brown household, you can’t beat Veggie Chilli on a cold, wet and windy evening
- Courgette, Feta & Broad Bean Salad
- Veggie Chilli – will serve two days as it always tastes better the second day
- Twice Baked Potatoes
- Fajitas
- Italian Balls & Spaghetti
- Tomato, Artichoke Heart & Butterbean Pasta Soup

Meal Planning Monday
Another week, another meal plan. Quite a bit of comfort food on there this week although I have the mother-in-law arriving on Friday so I may need to jig things round a little
- Quiche, salad and new potatoes
- Gnocchi – this was an experiment, I was going to blog if it worked but I made a peanut sauce with veg and it tasted awful so I’ll spare you the recipe
- Haloumni, Puy lentil and tomato salad
- Peppers stuffed with wild rice, sundried tomatoes and feta
- Nachos, refried beans and guacamole
- Mushroom and Leek Risotto
- Veggie Sausage and Crushed Potato Pie – I’ll blog it if it works by the time I’ve finished changing the recipe

- Slow Roasted Mediterranean Vegetables with Polenta

Meal Planning Monday
It must have been a couple of weeks since I last posted a meal planning monday, it’s been a crazy couple of weeks! This week however I’ve managed to put a plan together for the week. Well actually I was so exhausted, I just gave all the cards to my husband who chose the meals we were having this week
So here’s what is on the menu for the Brown household this week:
- Tricoloure CousCous Salad

- Pasta Al Arabiatta
- Twice Baked Potatoes
- Mushroom and Leek Risotto

Meal Planning Monday
We’ve been so busy this weekend I didn’t manage to get a full shop ordered for Saturday so I’ve been busy planning Tues-Fri this morning so it’s all been a bit chaotic. But here is what is on the Brown household menu this week
- Pizza – of the delivery version (a very rare treat indeed but we had guests staying)
- Curry, rice and naan bread (of the quorn pieces and curry sauce in a jar variety)
- Chilli and Spring Onion Feta with Mixed Grains
- Pasta Bolognaise and Garlic Bread
- Mushroom and Leek Risotto (carried over from last week)
- Cheese Omelette and Chips
- Slow Roasted Mediterranean Vegetables with Polenta

Meal Planning Monday
I’ve been so busy today I almost forgot to post this. We have guests on Friday so I’m doubling up the veggie sausage casserole ingredients to feed the masses, I love meals that you can just bulk up like that with no hassle
- Spaghetti and (veggie) meatballs
- Quiche, salad and new potatoes
- Quorn Biriyani – I’m going to attempt this in the slow cooker so if it works it will be blogged!
- Slow Cooked Stuffed Peppers with Wild Rice, Feta and Sundried Tomatoes – carried over from last week
- Mushroom and Leek Risotto
- Twice Baked Potatoes
- Sweet & Spicy Veggie Sausage Casserole

I’m a little more organised this week so you get my meal planning Monday post on a Monday
This miserable weather has influenced me to put lots of comfort food on the menu this week (we had a flash flood in the village and my road became a river!).
- Quorn Stir Fry with Noodles and Vegetables
- Baked Camembert
- Chilli & Spring Onion Feta with Salad and Mixed Grains
- Slow Cooked Stuffed Peppers with Wild Rice, Feta and Sundried Tomatoes
- Fajitas made with Quorn Pieces
- Asparagus and Green Bean Tagliatelle
- Mixed Mushroom and Pearl Barley Casserole with Thyme Dumplings

Meal Planning Monday – National Vegetarian Week
This week is National Vegetarian Week, now in this household it’s vegetarian week every week but I’m hoping to find a few more vegetarian recipes to try out over this week so hopefully next week I’ll have some new dishes to share with you
If you fancy winning some vegan friendly beauty products there is a competition currently running on my blog to win £40 worth here. But on with the vegetarian delights on our menu this week
- Quorn Korma, Rice and Naan (using a jar of Korma sauce because I’m home alone with the kids this weekend
- Baked Camembert
- Vegetarian Chilli (day 1 served with rice and sour cream)
- Vegetarian Chilli (day 2 served with nachos and guacamole – it always tastes better on the second day
- Grilled Haloumni and Puy Lentil Salad
- Leek, Cheese and Potato Bake – I’m going to try experimenting to see if this will work in the slow cooker
- Leek and Chestnut Mushroom Risotto

Meal Planning Monday
I admit my meal planning this week was done during the mad dash to get everything sorted and packed before going to Cybher for the weekend so the menu is a little on the unimaginative side but here it is
- Stir Fry using Quorn Chicken Style Pieces, Plum and Chilli Sauce, Stir Fry Veg and Noodles
- Goats Cheese and Red Pepper Quiche with new potatoes and salad
- Gnocchi, Pesto & Garlic Bread
- Chilli and Spring Onion Feta Salad with Mixed Grains
- Feta, Wild Rice and Sundried Tomato Stuffed Peppers
- Veggie Sausage & Crushed Potato Pie
- Veggie Burgers and Chips

Meal Planning Monday
This miserably wet weather is making me add lots of warming comfort foods to this weeks menu! You can’t beat a nice veggie roast dinner or spicy veggie sausage casserole
So here’s what’s on the menu this week
- Veggie roast dinner with all the trimmings! We use the Linda McCartney Roast and serve it with yorkshire puddings, stuffing, cranberry sauce, peas, roast potatoes, roast parsnips and roast carrots with gravy
- Pasta bolognaise, made with dolmio and veggie mince (some nights we need quick meals)
- Chilli and Spring Onion Feta Salad with fresh bread
- Grilled asparagus, red onion and haloumni salad
- Tomato, Artichoke Heart and Butterbean Pasta Soup
- Spanish style veggie sausage casserole – this will be this weeks slow cooker experiment and if it works it will be blogged
- Twice baked potatoes with spring onion and creme fraiche served with beans
