This miserably wet weather is making me add lots of warming comfort foods to this weeks menu! You can’t beat a nice veggie roast dinner or spicy veggie sausage casserole :) So here’s what’s on the menu this week

  • Veggie roast dinner with all the trimmings! We use the Linda McCartney Roast and serve it with yorkshire puddings, stuffing, cranberry sauce, peas, roast potatoes, roast parsnips and roast carrots with gravy
  • Pasta bolognaise, made with dolmio and veggie mince (some nights we need quick meals)
  • Chilli and Spring Onion Feta Salad with fresh bread
  • Grilled asparagus, red onion and haloumni salad
  • Tomato, Artichoke Heart and Butterbean Pasta Soup
  • Spanish style veggie sausage casserole – this will be this weeks slow cooker experiment and if it works it will be blogged :)
  • Twice baked potatoes with spring onion and creme fraiche served with beans
